Let's start by clearing up what a Brookie is. It's really very simple. It's a Brownie and a Cookie, all baked together for maximum scrumptiousness. Once you’ve tried this Brookie Recipe, you won't ever want to go back to just lonely Brownies and Cookies again!
I first put this recipe together as a Bake Along on Facebook in Lockdown v.1 2020. It was actually the last Bake Along I did as schools were going back, and some people could go back to work, so the need for a weekly baking distraction had lessened. However, it was so successful and one of my most watched videos. But then, what can I say - Brownies and Cookies mixed together was always going to be a big hit!

Brookie Recipe
Makes 1 x 8”x8” Square Tin
Cookie Ingredients
65gms (1/3 cup) Butter or Baking Spread
100gms (1/2 cup) Light Brown Sugar
1 Egg
150gms ( 1 1/4 cup) Plain Flour
1tspn Bicarbonate of Soda
50gms (1/3 cup) Chocolate Chips
Brownie
100gms (2/3 cup) Dark Chocolate
65gms (1/3 cup) Butter or Baking Spread
110gms (1/2 cup) Granulated Sugar
65gms (1/2 cup) Plain Flour
0.5tspn Baking Powder
1 Egg
Instructions
Preheat your oven to 160c Fan, 180c, Gas Mark 4, 350f
Grease and line an 8" square baking tin
Cookies
In a bowl cream together the butter and light brown sugar
Then beat in the egg
Add the flour and bicarbonate of soda and mix until it's a thick dough
Lastly mix through the chocolate chips
Spoon balls or blobs of the mix in the baking tray and put in the fridge to chill
Brownies
Using the same bowl break the chocolate and add the butter
Using 30 second bursts in the microwave melt the chocolate and Butter together. If you don't have a microwave you can melt in a glass bowl over a simmering pan of water
When it's melted mix together until it's all combined and glossy
Next add the sugar and mix through
Then add the flour and baking powder and mix until all combined
Lastly add the egg and mix
Remove the cookie dough from the fridge and add blobs of brownie mix to the baking tin in the gaps between the cookies dough
Bake
Bake for 30 minutes, or slightly longer if you prefer a better cooked brownie
When baked remove from the oven and allow to cool in the tin for at least 15 minutes before removing and transferring to a wire rack to cool.
Ingredient Notes
Cookies
Fat
My usual Cookie Recipe calls for real block butter. This is because cold butter, with its high fat content, will spread less when baking. However, as this Brookie Recipe is all baked in one tin, with sides, no spreading is going to happen, so a baking spread or margarine will work just fine.
Sugar
I used light brown sugar in this cookie recipe to give it a nice caramel flavour and gooey texture.
Flour
Use plain flour with added raising agent. You don't need this cookie to have too much lift in it, so the raising agent is kept to a minimum.
Chocolate Chips
These are optional, but I used milk chocolate. You can use whichever type you prefer.
Brownies
Chocolate
I use dark chocolate You can use an inexpensive supermarket chocolate as it going to be packed with so much sugar you won't notice if it's not an expensive one.
Fat
I would normally use block butter in Brownies for extra richness. However, as there is a
lot going on with this bake a baking spread or margarine will be fine if you prefer.
Sugar
I used white granulated sugar. You can use caster sugar if that's what you have.
Flour
Plain flour is best for this, as like the cookie, you don't want to get too much lift or air into the mix.
Technique Tips
You can either bake in 2 layers - a layer of cookie and a layer of brownie - I think it's best with the cookie on the bottom. I tend to leave my cookie dough lumpy so when it's all baked it pokes through the brownie batter.
I prefer to chill my cookies dough whilst I'm mixing the brownie. However, if you leave the cookie dough out of the fridge, it can be 'swirled' with the brownie batter as it'll be softer. This will give a similar e effect, when baked, to a marble cake.
I baked it for 30 minutes, but I like my cookies and brownies slightly gooey. If you're wanting something more cooked leave it in for another 5 to 10 minutes.
Pro-Tip
This is a great recipe for treat boxes. Mix it up with different flavour cookies dough, or add sweets and chocolate to the top.
Also, these are great for using up cookie dough that you may have in the freezer. Or batch make the cookie dough ahead of time and freeze it for whenever you have a Brookie order.
