Almond and Cherry Shortbread Recipe
This is a reinvention of a classic Bakewell Slice. I do love the nostalgia of a classic, but its fun to do something a bit different.
Instead of a pastry bottom, this has a shortbread base. Its crumbly and delicious.
I used Morello Cherry Jam for the filling, which was for 2 reasons: 1) Cherry and Almond pairs really well together. They really are a good match, and 2) I had 4 jars of the stuff in my cupboard that had to be used up.
The Almond Cake could stand alone without the other parts, but why have a plain Almond Cake when you can add shortbread and jam.
